Fat, or adipose tissue, is the most efficient storage form for excess energy. When a human eats more of the three majour goups of energy nutrients (fats, carbohydrates, and proteins) than needed for metabolic homeostasis, any excess nutrient is converted into lipids.
The process usually begins when free fatty acids are liberated from lipoproteins by lipoprotein lipase. The fatty acids eventually diffuse to adipocytes (fat cells), where they are assembled, in groups of three, into triglycerides by esterifying three fatty acids onto each glycerol molecule.
